Amsterdam's canals without Amsterdam's crowds, and with a twist the capital doesn't have: the Oudegracht runs a full storey below street level, so its medieval wharves and cellar vaults are now terraces at the waterline while the city goes about its business overhead.
01Why it's worth it
Utrecht was the religious capital of the Netherlands for centuries and is now its student city, which gives it a compact medieval core with a young, unhurried feel. The split-level canals are genuinely unusual: merchants once unloaded boats straight into cellars, and those vaults are cafés and restaurants today, so you sit at water level with the street above your head. The Dom Tower is the tallest church tower in the country, and the nave that once connected it to the cathedral was flattened by a tornado in 1674 and never rebuilt, leaving an odd, telling gap. Beyond that: a strong café culture, the Rietveld Schröder House (a De Stijl landmark, UNESCO-listed), the Miffy museum for anyone travelling with small children, and a rail hub position that makes the rest of the country a half-hour away. Thirty minutes from Amsterdam, it is where a lot of visitors wish they had stayed instead.
02How to experience it
Walk or cycle the Oudegracht and eat down on the wharf. Climb the Dom Tower on a guided ascent for the view across the flat country. Rent a bike, that's how the city moves, and use Utrecht as the base for day-tripping Amsterdam, Rotterdam, and the windmills rather than the other way round.

The Dutch make this recommendation almost as a correction: "the country is so much more than Amsterdam," one wrote. "By all means, Amsterdam is a fun place, but make sure you get out." Pressed on which city, the answer is specific: "Utrecht is a great city with its canals and old city centre, a more condensed version of the good parts of Amsterdam, but with way less obnoxious tourists."
