The city Filipinos name when the question is food — capital of the sugar country, birthplace of chicken inasal, and the answer people give even while conceding that the city an hour away holds the official gastronomy title.
01Why it's worth it
Bacolod is the centre of Negros Occidental, the province that ran the Philippine sugar industry, and the wealth left a landscape unlike anywhere else in the country: haciendas and their ancestral houses scattered through cane fields, most famously The Ruins at Talisay — the burnt shell of an Italianate mansion built by a sugar baron for his Portuguese wife, left standing as a skeleton.
The food is the reason people actually go. Chicken inasal was invented here and is taken seriously enough that Bacolodnons will tell you where the marinade differs street by street. Cansi, a sour beef shank soup soured with batwan fruit, is the local dish outsiders are told to try first. Piaya and the sweets from Silay complete it.
MassKara in late October is the city's identity — a mask-and-dance festival started in 1980 during a sugar-price collapse and a ferry disaster, deliberately conceived as a "city of smiles" response to a very bad year. That origin is worth knowing; it is not a tourist invention.
Beyond the city, the province opens up: Silay for heritage houses, Don Salvador Benedicto in the uplands for cool air, Mambukal hot springs, Sipalay and Lakawon for beaches, and the Negros Forest Park in the city for endemic wildlife.
02How to experience it
Fly into Bacolod-Silay, or come by fast ferry from Iloilo — the two pair naturally and locals bundle them. Give three or four days: a day of city food, a day for Silay and The Ruins, and a day inland or to the coast. Eat inasal at least twice and try cansi once.
The honest note
It is a working provincial city, not a scenic one. The draw is food, festival and the province around it — if you want a beautiful city to walk, Iloilo an hour away is the better one.
The Bacolod-versus-Iloilo question comes up constantly, and the honest answer depends on what you want. One Ilonggo — from Iloilo — conceded the point anyway: "Bacolod has slightly more things to offer (or maybe because I'm from Iloilo kaya medyo okay lang for me). Bacolod has Don Salvador Benedicto which has a pleasant 'mini Baguio' type feel." Asked specifically about the culinary scene of both, another was blunter: "Go bacolod. It has more to offer despite Iloilo being a City of Gastronomy."

From the locals
This is a place recommended in the plainest possible terms. Asked where to go aside from Palawan, Siargao, Siquijor, Boracay, Cebu and Bohol, one Filipino ran through options by interest and closed with: "If food is your thing, bacolod is hands down a favorite." Another answered the same question with a route rather than a name: "Iloilo + Guimaras. Negros Occidental: Mambukal Sulfur Spring + Lakawon Island + Bacolod foodtrip."
The single most useful recommendation is a dish. In a thread asking whether a three-day solo trip to Bacolod is worth it: "Cansi is a must try. All my friends here and abroad who have visited Bacolod loved it. It is my number one food recommendation!"
And on whether it works alone and cheaply, from the same thread: "Sulit naman. I did travel solo just this year sa Bacolod. For accom, ako I booked lang airbnb! Parang less than 2k lang for my stay ng 3D2N" — worth it; three days and two nights for under about £30.
Locals bundle the whole area as one trip, and even have a name for it: "Sama na rin natin ang Guimaras — the BIG (Bacolod. Iloilo. Guimaras) Tour."
